Gimme all the Granola
Sludgy oatmeal is so not for me. Granola, on the other hand, is delicious and nutritious! Chock full of fibre, this is a great breakfast or snack option for the whole family.
Vegan, Gluten-free
Prep time: 10 minutes - preheat oven to 300ºF
Cook time: 10 minutes
Ingredients:
4 cups rolled oats
1 cup raw nuts, chopped (e.g., walnuts, pecans, almonds, or a combination)
1 cup raw seeds (e.g., sunflower, pumpkin, or a combination)
¼ cup maple syrup
¼ cup coconut oil (you want it to be runny)
1 tsp vanilla extract
2 pinches sea salt
Directions:
Mix all ingredients in a large bowl, using a spoon or clean hands.
Line 2 baking sheets with parchment paper.
Spread the mixture evenly in a thin layer onto the baking sheets.
Bake 10 minutes at 300ºF, until very lightly toasted.
Cool before serving and storing.
Use a funnel to transfer granola into mason jars. Store in the refrigerator for up to 2 weeks.
Enjoy with almond milk or coconut yogurt, or as a snack on its own. I add in fresh fruit like berries, or dried fruit like raisins or cranberries, to make it extra nutritious and tasty. I also top with ground flaxseeds to get in some extra fibre and omega-3 goodness.
This is a great “messy sensory play” idea for kids too. Gets them involved with the baking and the best part is you get a week’s worth of breakfast out of it!
