Blueberry Cashew Smoothie
In an attempt to get more protein and fat into my diet to sustain breastfeeding, exercise and life, I tried out this delicious smoothie from the Joyous Cookbook. I made some modifications and here it is! PS I make the whole thing and pour half into a mason jar and keep it in the fridge for the next day - easy breakfast smoothie, good to go!
Vegan, Gluten-free (if that matters)
Makes: 2 servings
Prep time: 8 minutes
Ingredients:
1½ cups frozen blueberries
½ cup cashews
½ cup oat flakes (i.e., just regular dry oats, not cooked)
3-5 Medjool dates, pitted
1 cup nut milk of choice
1 cup coconut yogurt
Extra water or coconut water, to desired consistency
Optional items:
1 scoop Genuine Health marine collagen (this isn’t vegan) - use code ‘Surabhi20’ for 20% off
1/2 lemon, zest and juice - (I often skip this)
Directions:
Blend on medium for 30-45 seconds and enjoy!
