Double Chocolate Protein Pancakes

I love a good pancake breakfast, and nothing makes it better than chocolate! I love the addition of protein powder - you get an extra 20 grams of protein in which makes this a much more power-packed meal or snack!

Vegan

Makes: 12-15 pancakes

Prep time: 10 minutes

Cook time: 30 minutes (if using a bigger cook surface, it’ll be faster)

Ingredients:

  • 1 ripe banana, mashed

  • 2 medium eggs, whisked

  • 1¾ cups unsweetened oat milk

  • 1 tsp vanilla extract

  • 1½ cups spelt flour

  • 1 scoop Genuine Health fermented organic vegan protein powder, chocolate (use code Surabhi20 for 20% off)

  • 1½ tsp baking powder

  • ½ tsp sea salt

  • 1 tbsp coconut oil

For the Topping:

  • chocolate chips (we use Enjoy Life dark or Camino bittersweet chocolate chips - they’re vegan brands)

  • berries & maple syrup

Directions:

  1. Combine banana, eggs, oat milk and vanilla extract in a bowl.

  2. In a separate bowl, whisk together spelt flour, chocolate protein powder, baking powder, and sea salt.

  3. Transfer wet ingredients into dry ingredients, stir and then let sit for a few minutes.

  4. Melt coconut oil in a large skillet over medium heat. Pour some batter into the pan for each pancake. Plunk the chocolate chips on top and lightly push them into the batter. Cook for 2-3 minutes, until soft bubbles form in the batter, then flip and cook for another minute or two.

  5. Once cooked, enjoy with berries and maple syrup!
