Vegan Apple Crisp (GF option)

After picking 20 lbs of apples last week, I was excited to get in some baking on this rainy day! I used Jonagold apples for this one and it turned out so well!

This recipe is from Loving it Vegan, You can make this gluten-free as well, like I did, by using GF all-purpose flour and GF rolled oats. You may be able to sub the same amount of cow’s butter or coconut oil for the vegan butter, but I don’t know how it’d turn out because I haven’t tried it. If you try it, let me know!

Vegan, Gluten-free option

Makes: 8 servings

Prep time: 20 minutes

Bake time: 50 minutes

Ingredients:

For the Apple filling:

  • ~8 cups Granny Smith or Jonagold apples, peeled and cubed (I used 6 large and 1 small apple)

  • ½ cup Brown sugar

  • ¼ cup All-purpose flour (I used Bob’s Red Mill gluten-free all-purpose baking flour)

  • 1 tsp Ground cinnamon

  • ½ tsp Ground nutmeg

  • ¼ tsp Sea salt

  • 1 tbsp Lemon juice

  • 1 tsp Pure vanilla extract

For the Topping:

  • 1 cup All-purpose flour (I used Bob’s Red Mill gluten-free all-purpose baking flour)

  • 1½ cups Rolled oats

  • 1 cup Brown sugar

  • 1 tsp Ground cinnamon

  • ¾ cup Vegan butter, measured then melted

  • 1 tsp Pure vanilla extract

  • ½ cup Pecans, chopped (optional)

Directions:

  1. Preheat the oven 350°F (180°C). Spread vegan butter on base of 9x13” baking dish.

  2. Peel and cube apples and add to a mixing bowl with rest of Filling ingredients.

  3. Transfer the apple mix to baking dish and smooth down.

  4. Prepare the topping. Add the flour, oats, sugar and cinnamon and mix. Then add in melted butter and vanilla and combine. Stir in the pecans, if using.

  5. Use your hands to spread the topping over the apple layer evenly.

  6. Bake in the oven for 50 minutes until the top is golden brown and the apple mix is bubbling up the sides.

  7. Remove from the oven and allow to cool 10 minutes before serving.
